Marinated artichokes (in oil)
Summer squash
Napa cabbage
Cherry tomatoes
Parmesan cheese
Kidney beans
evoo
balsamic vinegar
Dice all ingredients, except beans, into small bite-sized. Mix up in bowl and toss with remaining artichoke oil and additional evoo and balsamic vinegar. Taste and add salt and pepper if desired.
