Need Vertical Broiler and full day for cooking.
3-day pork shoulder, marinated
Marinated Mangalitsa meat, slabbed
Pineapple slices
Pineapple juice
apple cider vinegar
Gochuchang chili paste
Honey
Cumin
Tumeric
Oregano
Garlic powder
Onion Powder
Tobasco and/or Sriacha
salt and pepper
Slice the pork shoulder into about 1/4 inch slices, then transfer to a large dish or bowl. Mix other ingredients together. Aim for taste and liquid paste viscosity to coat meat. Cover and refridgerate for 3 days.
Trombo time:
Place a few pineapple rings at base of Trombo. Begin layering marinated meat alternating when desired with pineapple rings.
Rotate loaded skewer with vertical broaster, shaving off as it cooks. Serve with
