Danger Moon Pork Portions
Basic Preparation
Boil pork portion(s) 2-5 minutes. If frozen, boil longer.
Do not overboil as to preserve flavor/fat.
Pre-heat pan (we prefer cast iron) over medium or medium-high heat.
Using tongs, place each pork portion in pre-heated pan, piercing each portion; this will release fat/lard.
Sear each pork portion, both sides, briefly in the released fat.
Slice each portion lengthwise nearly in half, maintaining shape.
Using tongs, place each portion flesh-side down cooking confit until 160 degrees F. Remove casing and slice meat into preferred size.
