Farmer's Moto
Ruis Rounds (ruisleipä recipe in another post)
Ground Mangalitsa, 1/2 lb for 2 servings
1-2 tsp dried sage leaves (powder will do but use less)
3/4 tsp salt
1/2 tsp pepper
1-2 T maple syrup
Mix all together.
Bring cast-iron pan high heat. Form meat mixture into patties. Cook each side for 1 minute. Top with goat cheese (we prefer with honey), cover and turn off burner. Let cook covered for 5-10 minutes or until 140 F minimum temperature.
While cooking, slice Ruis Rounds in half and warm or toast each side.
Place each patty between one Ruis Round. Voila!
