Fried Rice
Day(s) old rice works best--it’s dried out. Asian style Mangalitsa. Or, without ground or minced pork, marinate diced pork as long as possible* Mangalitsa for Asian dishes Sesame Oil Heat enough to cover bottom of cast iron pan. Add Onions Sliced Chinese style. Cook until softened. Crush 2 cloves Garlic Add just before other ingredients. Add ground Mangalitsa. Break up over high heat. Add finely minced or grated fresh Ginger root Turn down heat to low. Sesame Oil Heat enough to cover bottom of WOK pan. Add Carrot Julienned . Cook 3-5 minutes. Slice on the bias Celery 1-2 stalks, sliced diagonally. Throw in. Add Onion 1 medium, sliced Chinese style. After softened, Add Garlic 2 cloves, minced. Add Ginger Root Minced or finely grated Push cooked vegetables up to sides. Toss in more sesame oil if needed over high heat Add Mangalitsa meat. Stir around a bit with wooden spoon til brown. Add dried red pepper flakes. Add about 1./4-1/2 c liquid aminos. Add a couple glugs apple cider vinegar. Stir all together. Cover and turn off heat. Before serving, mix meat with vegetables. Cast Iron Pan Sesame oil. Heat on high enough to cover bottom of pan. Add day-old rice. Break up with wooden spoon. When browned, create circle in middle by pushing rice to side. Add more oil if necessary. Crack 1-2 eggs in middle and scramble immediately until cooked. Toss in Handful Frozen Green Peas. For serving, Add rice to bottom of bowl. top with meat and vegetable mix. Garnish with the chopped green onions and sesame seeds.
*Marinade 1lb meat 2 T liquid aminos or soy sauce 1 T apple cider vinegar or rice vinegar 2 T honey or 4 T sugar 1 T red pepper flakes 1 sq. inch ginger root, finely grated or minced 2-3 cloves minced garlic Mix together and pour over meat coating. Put covered in fridge. Flip meat occasionally.
