George Burrito
Crock pot & Oven recipe Ingredients Frescados tortillas Mangalitsa meat* 1 quart salsa 1 can green or red enchilada sauce Shredded cheddar or cheese of preference Optional: 2 hot peppers, sliced chives or green onions, scissored Leftover Porca Salsa con Queso Instructions Melt lard in cast-iron pan. Add cumin, paprika, chili pepper. Stir around. Stir meat in and around spices, browning for a few minutes. *Or use marinated South of Border mangalitsa and skip this previous part. Place meat in crockpot, cover with entire quart of salsa. Cook on low for 8-12 hours, depending on crock pot. When done, scoop mixture onto tortilla. Add Trin’s Beans, Spanish rice, lettuce, preferred fillings. Roll. Chow. For oven method: Put each in 9 x 13 cooking pan, folding into enchilada or burrito shape once each is filled. Cover with red or green enchilada sauce. Grate some cheese on top and also sliced peppers and green onions, if preferred. Bake 350 F for 20-25 minutes. Meanwhile, heat leftover Porca Salsa con Queso. Once your George Burritos are done baking, serve with a dollup of Queso on side, some garden greens, and possibly tortilla chips for scraping, scooping if meal is particularly messy. buen apetito!
