Mangalitsa meat, South of Border style pig-0-de-gallo/salsa Frescados tortillas Pig-o-de-gallo/salsa Ingredients Freshest tomatoes, red onion, garden peppers (pepperoncini, jalapeno, et al; I go for color), cilantro, salt Optional: lime/lemon Instructions Chop or dice enough tomatoes, peppers, and at least half onion...depending on number of people or preference . With scissors, cut a loose handful of cilantro. Shake in some salt and a squeeze of lime or lemon (½-1tsp about). Toss together. Frescados Tortillas, the final step. Heat tortillas over meat in pan or fold and lightly toast. Open up tortilla and fill each with one Mangalitsa, top with heavy dose of the salsa Pig-0 de gallo. If garden greens are available, toss in as well. Fold and eat taco style or fold into burrito. Buen apetito!
