Pork Curry
Ingredients
Mr. Kooks, tikka seasoning
Pork from pig, cut up
Mix together seasoning with as called for: yogurt and oil. Put in bag with pork, ensure coating all pieces. Stick in fridge for 6-48-72 hours for marination.
Sauce
Curry spice Cook in pan on low heat with smidgen of lard. Sorta brown it.
Onion Cut Chinese style, add to curry spice in dollop of lard/fat. While cooking,
Ginger Root grate finely about ½-1 square inch peeled ginger root into same pan. Mince
Garlic 1 clove garlic, add to pan when onions have softened;translucent. Slice/dice 1-2 Potatoes sweet or regular potatoes, add to pan. Push all contents to side of pan. Add
Lard if necessary for meat browning. Add in marinated pork from fridge. Sear/brown.
Bullion Add to corresponding water amount then add to same pan. Add
Okra. and
Hot Peppers if preferred. I do.
Cook on low for about 1 - 2 hours again as pork prefers SLOW and LOW cooking.
Meanwhile, steam 2 cups rice. When curry is finished, mound rice into bowl, add curry, top with
Plain Yogurt. Garnish with Cilantro
Scoop up with warm Naan.
