Rustic Bruschetta
Syl's Sourdough bread
Sun Gold and Cherry tomatoes, freshest are best
Fresh basil
Evoo (extra virgin olive oil)
Balsamic Vinegar
Parmesan or Mozzarella cheese if preferred
Half tomatoes, toss with evoo, balsamic vinegar, chopped basil, and a few grinds of salt. Let sit a few minutes.
Slice and toast til crsip the sourdough. Top with evoo, balsamic vinegar and a grind of salt. If using cheese, grate or slice onto toasts. Broil until melted. Remove and top with tomato mixture.
Tasty on a hot summer day.
