The Heretic
Ingredients
Falafel, Tsatziki sauce, chopped tomatoes, Pita or Tortilla
Falafel….with heretical pork
Mangalitsa pork, ground 1/2 lb
Fantastic World Foods falafal mix
water
Danger Moon lard
*I add extra hot peppers
Instructions:
Place Mangalitsa meat into bowl. Add a cup of falafel mix. Add a cup of water. Mix all thoroughly with hands (1-3 minutes). Let sit for 15 minutes until all moisture has been absorbed. Meanwhile, heat up 1-2 cups of lard in cast iron pan. Watch for hot jumping lard splashes! While lard is heating, form 1” balls in palm of hand and flatten. When lard is ready fry each side about 1-3 minutes depending on crispiness preferred.
Tzatziki sauce
1/2 cup Viili
1/2 cup sour cream
1 med. size cucumber peeled, seeded, and finely chopped.
1 1/2 T. olive oil
1/2 T. apple cider vinegar or lemon juice
1/2 tsp. salt
1/4 tsp. pepper
1-3 tsp. fresh chopped dill (or dry though 1/2-1 tsp)
Instructions:
Place prepared cucumber into a cheesecloth (or light towel) as to squeeze out/remove as much liquid as possible. (I squeeze it into a glass or pitcher of water and enjoy a refreshing drink). Let rest/drip for a bit. Meanwhile, mix oil, vinegar, salt and pepper. Then mix in viili, sour cream and remaining ingredients. Mix well and refrigerate at least 2 hours.
Place dollup of tzatziki sauce in bottom of pita or tortilla. Place 2-3 crushed heretic falafels atop. Top with Pig-o-de-gallo, more tzatziki, sriacha, lettuce, pepperoncini, preferred toppings.
